Tarragon

Artemisia dracunculus L.

tarragon

Safety Notes

A published safety review found no evidence of acute toxicity or mutagenic activity at levels relevant to normal human culinary consumption, despite tarragon containing estragole, a compound that carries more significant caution at concentrated, essential-oil-level doses. Normal culinary and tea use is considered well tolerated; as with other estragole-containing herbs, concentrated essential oil preparations are a separate consideration this site does not document.
