Very well tolerated in normal culinary amounts. A well-documented genetic taste variation causes some people to perceive fresh cilantro leaf as tasting distinctly soapy — this is a real, harmless sensory difference, not a safety concern. Coriander is a genuine, if uncommon, food allergen, and can cross-react with other Apiaceae family plants (including celery, fennel, and cumin) in sensitive individuals.
